And the rest as they say is history.

I’ve been following the ketogenic diet ever since.

And it’s been fantastic.

But as great as it’s been…there was always something I still wanted.

Something I missed.

Truth was, even though I felt wonderful, I still missed my carbs.

I couldn’t help it.

I missed the taste of fresh bread, baguettes, garlic toast and bagels.

I missed baking cookies and eating chips and salsa while watching T.V.

And I really missed my waffles.

I searched high and low to find replacements.

I went to every Natural Health market and grocery store I could find.

I even tried a variety of breads and pastas I found online.

The problem was that most were simply gluten free…

NOT, Low Carb.

And the recipes I did find online…

Never turned out quite right.

They crumbled and fell apart.

So not only didn’t they taste good, but you couldn’t use them to make sandwiches or wraps.

And being a baker and a recipe creator myself, I could tell that the people didn’t know how to make bread.

And even more so, I couldn’t believe how difficult they made everything.

I’ve been baking and cooking since I was 11 years old, and even I found the recipes tedious and confusing!

And they tasted even worse.

Fed up with these failed attempts at making bread, I ended up throwing good food in the trash and wasting a lot of otherwise healthy ingredients.

Deep down I knew I could do better.

I knew there had to be a way to not only make keto friendly breads but a whole variety of keto friendly carbs as well.

I knew if I could eat bread and some of my other long time “carb” favorites.

I’d never have any problems sticking to the ketogenic diet.
