Pesto is the secret to this effortless, yet flavorful baked salmon dinner. It adds so much bright and herby flavor to the entire dish with minimum effort. The recipe can easily be adjusted to accommodate more or less servings. Rule of thumb: 1 tablespoon of sauce for each fillet.
Preparing: 10 Minutes / Cooking: 20 Minutes
Ingredients (4 servings)
30 oz. salmon
2 oz. green pesto
salt and pepper
Directions
1. Place the salmon skin-side down in a greased baking dish. Season with lemon juice and pesto on top, and salt and pepper to taste.
2. Bake in oven at 400°F (200°C) for about 20 minutes, or until the salmon flakes easily with a fork.
3. Meanwhile, stir the sauce ingredients together. Pesto, mayonnaise and yogurt.
Tip: Simple sides are just as elegant! Broccoli – quickly steamed or roasted with just a touch of caramelization – pairs beautifully with this salmon dish. Or try a hearty salad with greens, pecans, seeds, and a healthy dose of fresh, homemade vinaigrette.
