Ingredients
FOR THE WAFFLES: Cooking spray for waffle iron
¼ cup coconut flour
¼ cup almond flour
¼ cup flax meal
1 teaspoon baking powder
1 teaspoon stevia, or other sugar substitute
¼ teaspoon cinnamon
¾ cup egg whites (about 3 whites)
4 whole eggs
1 teaspoon pure vanilla extract
FOR THE WHIPPED CREAM: ½ cup heavy (whipping) cream
1 teaspoon stevia, or other sugar substitute
Directions
1. To MAKE THE WAFFLES: Heat the waffle iron to medium-high heat.
2. Coat with cooking spray.
3. In a large bowl, whisk together the coconut flour, almond flour, flax meal, baking powder, stevia, and cinnamon.
4. In another medium bowl, beat the egg whites until stiff peaks form.
5. Add the whole eggs and vanilla to the dry ingredients. Mix well to combine.
6. Gently fold the beaten egg whites into the dry ingredients until fully incorporated. -Pour the batter onto the preheated waffle iron. Cook according to waffle iron directions.
7. TO MAKE THE WHIPPED CREAM: In a medium bowl, whip the heavy cream for 3 to 4 minutes, until thick. -Add the stevia. Continue to whisk until stiff peaks form, about 1 minute more.
8. Top the waffles with equal amounts of the whipped cream and serve.
